Cookies should be sweet, so of course we have some sugar involved!
Brown sugar adds a molasses-like quality while adding sweetness, perfect for cookies.
Milk will be our wet ingredient, helping to form the dough that will become our cookies.
This will add a nice richness to our dough which will compliment the sweetness of our sugar, and will keep our cookies from feeling too dry when set.
A little vanilla will go a long way in adding some flavor complexity to our cookies. It has also been known to have some heart health benefits!
Make sure we’re using the unsweetened stuff! Cocoa powder is rich in polyphenols, which are naturally occurring antioxidants that may help with inflammation and cholesterol levels.
A little salt will help in balancing out the sweetness of our cookies. Just a pinch will do the job.
Rolled oats will not only provide the body our cookies will need to set properly, but are also a fantastic source of fiber and antioxidants.

Prepare the Dough
Combine all of the ingredients (except the Rolled Oats) in a large bowl, whisking together until smooth, and place in the fridge for 3 minutes.
Take the batter out and fold in the 3 cups of Rolled Oats.
Form the Cookies
Drop tablespoon-sized balls of dough onto wax paper, flatten, and allow 30 minutes for cookies to set (or place in the freezer for 10 minutes).
